Prawns with lemon and
coconut

| Ingredients: 500g large raw prawns, shelled 250 ml thin coconut milk 2 tbsp lemon juice 1/4 tsp fish sauce 1/4 tsp sugar 1/4tsp salt 2tbsp diced shallots 5 fresh small green chilies sliced into thin circle |
Directions: 1. To butterfly the prawns, cut them lengthwise almost all the way through and splay them out. 2. Boil the coconut milk in a pan, add the prawns, cook for one minute and remove the pan from the heat. Allow to stand for about ten minute-until the prawns are just cooked-then remove them to slotted spoon and place on a serving plate. 3. Add the lemon juice, fish sauce, sugar and salt to the coconut milk in the pan, stir well in one min. and then spoon this sauce over the prawns. Sprinkle over the shallots and chilies, and serve with rice. ****enjoy your meal, bon appetite, buen provecho, eets makelijk eten. |
