Kare-Kare

Ingredients:
4 cloves garlic, crushed
1 sliced big union
1/4 cup cooking oil
1/2 lb. eggplant quartered
1 small banana blossom slice (optional)
2 inches cut string beans
2-3 small radishes cut into 2 inches
1 tsp. paprika
1/4 tsp black pepper
1/2 cup peanut butter
Directions:
1. Clean and wash thoroughly calf's leg or any desired meat to use. Cut into serving pieces. Place in deep casserole with water and bring to a boil. Simmer for an hour or until meat is tender. Remove meat and set aside. Remove and discard surface fat from broth; set aside broth for sauce.
2. In a deep skillet, sauté garlic and union in oil. Add meat and vegetables. Season with paprika, and pepper.
3. Pour broth into meat and vegetables mixture. Stir in peanut butter. Add powdered rice (this is optional). Stirring constantly to keep from lumping. Cook until vegetables are tender.
4.  Serve with alamang and hot cooked rice.
