Eggplant Salad (Ensalada)

Ingredients:
3-5 pcs eggplant
garlic (if desired)
1 pc onion (sliced)
3-5 pcs. boiled okra
boiled talbos ng kamote (desired amount)
4 pcs. kalamansi juice
3 tsp. vinegar
1 tsp. white sugar or to taste
Directions:
1.  Grill eggplants until done. Peel off skin and detach head. Boil okra and talbos ng kamote. Put eggplant in a bowl. Sliced in smaller sizes or in bites the remaining vegetable ingredients when cooked. Mix with kalamansi juice, vinegar and sugar. Serve with any fried fish or grilled fish. You can add up more vinegar according to your desired sour taste. Same also of sugar if you desire a sweet & sour taste.
